The vino di anna palmento bianco is made with a blend of local native grapes from different vineyards lying at altitudes ranging from 760 to 1,200 metres above sea level. The grapes are harvested manually during the month of september.

The grecanico and grecanico dorato grapes macerate with their skins for a week. The remaining varieties are pressed in whole bunches and are placed directly in stainless steel tanks where they ferment spontaneously with their native yeasts and without temperature control. The two fermentations are united and the resulting wine undergoes malolactic fermentation followed by a five-month aging with its fine lees. The wine is bottled without clarifying or filtering and only a minimal amount of so2 is added.
